This page is a work in progress. But here are a few vegetarian lunch ideas to pack for your toddler.

The Dr.Praeger’s veggie burgers are delicious and nutritious. I love them because they are easy to find and make. I also recognize all the ingredients on the box!
Brown rice with tofu, a small orange, and lightly steamed veggies.
My son LOVES tofu. I buy organic spouted tofu from Trader Joe’s. Organic is best when purchasing soy since it is one of the leading genetically modified ingredients in America. I made this tofu by cutting it into squares and marinating it overnight in the fridge with some Tamari (soy sauce) and toasted sesame oil. The next day cover a baking sheet with tin foil and bake on both sides for about 12 minutes (or until brown) on 350 degrees. The vegetables here were frozen (frozen vegetables can be just as good for you as fresh since they retain their nutrients when frozen). Don’t overcook. I lightly steam or just let it defrost by itself.
